Autoimmune diseases scientifically linked to processed food intake

Angela Holtzen

I was diagnosed with and autoimmune disease when I turned 30 as was my twin sister. All the sudden I was diagnosed with more than 10 food allergies including gluten, some meats, soy, nuts, fish, to list a few. I had a rash all over that insanely itched and my throat swelled after meals. I went to an allergist who wanted to put me on daily expensive pills. I chose not to listen and just change my diet. I have never had more energy, I am hardly ever sick, I have not been to a Doctor in 2 years...

Thanks for posting this. My dad has myelin sheath issues, most likely bec of salt/processed food intake, as well as aging. It helps to know that changes can be made in food intake.

Totally, It works. People think I am crazy sometimes, but they didn't see me with a rash that itched all over my body and not being able to breathe. I believe process food causes most of our health problems. I've learned more and more to take the eastern approach to medicine. I have not taken over the counter drugs in two years either. It is possible. Unless you break a leg or something serious.

I agree with you Angela, food is seriously our medicine and plants were created for human consumption. I've been doing my best to adopt a whole plant-based eating lifestyle, the only thing holding me back is my environment at times when I'm not prepared. It's not as easily found. But there's a lot of work out there to make "real" food more accessible.

Awesome, I know how it is, the world is slowly changing this way, in the past three years since my issue with gluten I am finding more and more restaurants and markets support it. I'm positive the more mainstream this becomes the easier it will become. Look how long it took people to realize cigarettes caused cancer. Currently, I am experimenting with urban gardening, it is hard to produce all the food you can consume.

That's awesome, let me know how it goes with the gardening. I've tried starting with an herb garden and it's definitely hard to keep up so I can only imagine what other fruits/veggies are like.

For some reason this year is going great, I just got five carrots out of a pot, and now a potted apricot tree is blooming. I finally got the tomatoes to grow after three years of testing and peppers and lettuce. So far this is the best year. We have had more sun this winter than normal so maybe that has contributed to the growth. I read that for Herbs to get better flavor sometimes let them go a little bit without water. :)
