    I love the papaya with the feather - I mean who does that and makes it look so good? I'd love to see more food art in galleries - it could be a whole wave of inspiration just waiting to explode (hint, hint Niklas if you are reading this). I usually shoot food in a simple way with minimal lighting tricks and not much over styling because I just want the pure food to shine.     Wow - Niklas Hansen's food art is STUNNING. I'm so amazed at how you can stylize food in a way that makes people appreciate its beauty and complexity like never before. As a food blogger myself I try to capture food in the most artistic way possible but Niklas really makes me aspire to do so much more!

      I stumbled upon a copy of The Gourmand (an amazing food magazine) and came across his photo of the eggs. I had never seen food presented so artistically before. I thought of food stylists as people who tried to trick you and make the food look better than it is but Niklas really made me see the art in it.

      What was your favourite? What do you usually shoot?

    These are beautiful. I love this point he brought up about how to get started: "In the beginning I had a list of different companies and different magazines that I wanted to work with and a few different photographers that I dreamt of working with. Not every goal on that list worked. It’s very important to not be let down by no, because even if you get a no there is something to learn from that no. There is a small step you can take by getting in there showing what you have and trying to get them to listen to your ideas. You’ve won something little by doing that. After a couple years a lot of the assignments I got were from people I met in the first six months. You mustn’t give up if you believe in it."

      Niklas is a very charming Swede. We did the interview on Skype while he worked in his kitchen. While he was telling me how he plans out his shoots in advance he showed me a giant wall of post-it notes that he uses to keep his schedule. I didn't know food stylist were that in-demand but he's an extremely talented guy and he stays busy. Definitely not afraid of hard work.
