For 7000 years oyster beds protected New York's shores from storm surges by creating enormous underwater reefs. Decades of pollution destroyed these natural buffer zones but wild oysters can now make a comeback thanks to the improving water quality in the New York harbor. Paul Greenberg's op-ed in today's New York Times explains this turn of events and why we need more oysters in our future.
