Great article from the NYTimes by Mark Bittman who offers advice and recipes for incorporating more vegan meals into your diet. He also stresses the idea that one-fits-all diets do not exist. I find this comforting as I am adding a few local, organic eggs a week into my diet after being vegan for 2 years.
