Thanks, Jackie! So far, our biggest challenge is getting the food we grow served in the school cafeteria. There's a lot of shifting that needs to happen before we can make that goal possible: kitchens need to be redesigned; money needs to be budgeted toward extra labor to prepare fresh, unprocessed fruits and vegetables; fears about food safety of small farms needs to be alleviated; positive attitudes toward fresh, local produce need to increase; systems need to be put in place to make it easier for schools to find and order food from local farms. There is a lot of momentum around improving our health through local food right now - I'm optimistic that we will start to see real change soon!
