Know Your Meat, and Appreciate It

As a butcher and chef at New York City’s Back Forty restaurant, Shanna Pacifico prides herself on using whole animals, not just the conventional cuts. The practice (which we’ve praised before) affords her a deep connection to the food she serves. If you’re going to eat (or serve) meat, this seems like a great way to do it.     I really like Shanna’s “way” with meat, she’s really into the process and has such a creative approach to it. Watching her fascinates me, even! It must be her personality too, she seems so cool. Bet the stakes she makes are really good, I’d love to try for sure, even though I’m not that crazy about meat. Thanks for sharing, Patrick!
