Restaurant Day: Why Hundreds of People Will Be Opening Food Carts on May 18

On May 18, hundreds of people around the world will be opening pop-up restaurants for the day. The holiday started two years ago in Helsinki (where, conveniently, single-day pop-up restaurants are exempt from health codes). Helsinki's mayor calls it "exactly the kind of project that will define our future." Since the beginning, they've been joined by people in dozens of other cities.

    This is really interesting. Do you know more about the legality around popping up your own restaurant? For example, some places would require you to have a permit in order to sell anything (even if it's just lemonade and cupcakes). It would be interesting to have something in the lobby of your office...

      I think it's different everywhere, but in most cities, it's probably regulated (it just happens that Helsinki has a loophole). But I wonder if anyone's ever been prosecuted for a one-day lemonade stand or even a one-day full-fledged food cart...seems like the kind of thing that would fly under the radar.
