For a few days each year the world’s greatest chefs go AWOL—instead of manning the kitchens of your local Michelin-rated eateries, these culinary artists convene in Copenhagen for MAD, Danish superchef René Redzepi’s food conference extraordinaire. This year, the theme of the conference was “What is Cooking?” a cerebral, yet playful follow-up to last year’s more carnal “Guts.” Whereas last time, famed Italian butcher Dario Cecchini opened the MAD3 conference (“mad” means food in Danish) by gutting a freshly killed pig in front of 600 conference attendees, MAD4 began with soba master Tatsuru Rai simply and methodically preparing his famed buckwheat noodles.
