Photographer Ryan Smith cuts through the wok for another look at one of the most popular pan-Asian dishes.

Pad Thai is that ubiquitous and delicious dish that you can find find at pretty much any Thai restaurant, except for ones in Thailand (as Alexandra Greeley explained in Gastronomica, the dish is probably of Indo-Chinese origin).

But chances are you've never seen it like Ryan Matthew Smith photographed the dish for the forthcoming book Modernist Cuisine. Smith's also the guy behind popcorn popping in slow-motion and he recently spoke with Feature Shot about the cookbook's visuals.
